Dr. Brenda Mossel
Making science work for vulnerable people

With decades of manufacturing experience and a PhD in science, Dr. Brenda Mossel applies her expertise to develop innovative food products that address the specific needs of vulnerable populations, creating tangible improvements in their quality of life.

The Queensland-based scientist works in a specialised food laboratory, designing and testing products that solve real-world problems for people with specific health challenges.

“I use my science to make people’s lives better, particularly vulnerable people,” said Brenda. “I want to actively use my science to make vulnerable people’s lives better.”

Brenda’s career journey took her from academic aspirations to applied manufacturing, a transition that came with its own set of challenges.

“I started out with a PhD, wanted to be an academic. Started out lecturing. Worked out that academia wasn’t for me,” said Brenda. “When I was trying to break in, there was very much this idea that PhDs lived in Ivory Towers. They didn’t really know how to apply their science. So that was quite difficult.”

For Brenda, manufacturing represents the perfect intersection of scientific rigor and practical application, allowing her to create solutions at scale.

“Manufacturing is about making things at a scale with an appropriate shelf life to a standard—something that is safe, legally saleable, and meets agreed standards”

“In food manufacturing, it’s not just about making the product but ensuring it can be scaled, is cost-effective, and meets taste expectations.”

Her professional environment reflects this blend of scientific precision and practical innovation.

“It’s very much organised chaos. My desk has my boys’ photos, my work tools, and a lot of things going on at once,” said Brenda. “Our lab is a food lab with fridges, freezers, and equipment for testing and mimicking production processes.”

Brenda takes particular pride in developing complex products that have transformed lives through their innovative approach to specific health needs.

“The technically challenging products are the most exciting. For example, our liquid thickeners—we were the only ones on the market for eight years because of how complex they were to produce,” said Brenda. “When you get clinical trial data where people come back and say you have just changed my life, these are really vulnerable people in really vulnerable stages of their lives… job done.”

Despite progress, Brenda observes that the manufacturing sector still faces challenges with diversity, particularly at leadership levels.

“There’s still a lack of diversity in manufacturing, especially at the board level. It’s not just about being a woman but about having diversity of thought”

“If young women can’t see representation, it’s hard for them to aspire to be part of the industry.”

Looking ahead, Brenda remains committed to her core mission of applying science to solve real-world problems.

“I’d like to solve more people’s problems using my skills—developing systems, processes, and relationships to find solutions,” said Brenda. “So maybe my answer for my future is exactly what I’m doing now.”

For those considering careers in manufacturing, Brenda emphasises practical experience and personal support networks.

“Get exposure. Try internships or short placements to see if you enjoy it. Manufacturing isn’t for everyone, but if you thrive on chaos and challenges, you’ll love it,” said Brenda. “Choose a supportive partner and ensure there’s equality in your personal and professional life. You can have it all, just not at the same time.”

Through her innovative work, Dr. Brenda Mossel demonstrates how scientific expertise can create products that significantly improve quality of life—proving that manufacturing can be both intellectually stimulating and profoundly meaningful in its impact.
